Chef Kelly Boyer of Paleta recently launched a Keto Cleanse to make reaching ketosis (you know – fat burning) more manageable. With all this talk about keto in social media and among my friends, I was excited to find out more at her recent gathering at her home. Basically the idea is that when you eliminate sugar from your diet and add good fats to switch your body into ketosis and become a fat burning machine.
“Ketosis is a metabolic state of the body that comes from consuming a low-carb, moderate protein, high-fat diet that forces your body to use ketones as its energy source. By controlling intake of these macronutrients, you are essentially draining the body of its common energy source (glucose) and in turn it reacts by creating its own energy source from stored fat (ketones). Our bodies are like cars that are fueled with two types of gas: sugar (cheap gas that essentially damages the car) and fat (premium fuel that improves the car’s performance). We need to stop fueling our engines on sugar and start burning fat as our primary energy source.”

Just who is Kelly Boyer? In 2006, Founder and CEO Kelly Boyer started PALETA in her kitchen by delivering clients healthy twists on haute cuisine with ingredients sourced from local farms, cruelty-free ranches, and responsible fisheries. A survivor of late stage terminal cancer, Chef Kelly has made it her mission to introduce the world to a healthier lifestyle through the convenience of daily home meal delivery.
After graduating with honors from the Le Cordon Bleu culinary arts program, Kelly decided to apply her cooking techniques to create more healthful fare. Friends started asking her to cook for them, then referred her to their friends, relatives, physicians, personal trainers, and her passion project became her life’s calling. Before PALETA, she graduated with honors from Northwestern University’s masters program in Business and Organizational Development, was a Human Resources executive at a few large companies, but focused almost exclusively on the entrepreneurial aspects of each of those businesses.
